Ground Beef Kebab
Recipe By : "Sephardic Cooking" by Copeland Marks
Country : Persia (Iran)
Makes : 4 or 5 pan kebabs
1 pound ground beef (or lamb)
1 medium onion, grated (1/2 cup)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin seed
1/3 teaspoon baking soda
1. Mix everything together and let sit for several hours, overnight, or just a few minutes.
2. The modern way would be to oil a shallow metal baking dish, put kebab mixture into the pan and flatten out to about 3/4 inch thick. Then separate the meat with a spatula or knife into strips 1 inch wide and 5 inch long. Leave 1/2-inch space between the ground meat strips. This is to simulate the idea of the meat being fitted on metal skewers.
Broil for about 6 minutes, turning over once.
Serve warm with rice.
